Protein Packed Veggie Macro Bowl

This veggie macro bowl is filled with nutrients like Iron, Magnesium, and packed with Fiber. It has a good balance of healthy fats, protein, and carbs. It can be hard to get enough protein with just veggies but the rice and beans in this bowl make it filling and contains over 40 grams of protein!

The flavors taste balanced between salty and savory and also can be versatile! Just switch up the type of beans and toppings. For example: switch the adzuki beans for black beans, and veggies for sweet potatoes, then voila! A different bowl with different flavors! Feel free to switch any toppings in their bowl to change the vibe. This recipe never gets old. Enjoy! 

INGREDIENTS

2 cups greens.
1 Cup Diced veggies: Cucumber, green onion, carrots, beets, mushrooms. 
½ Cup Brown Rice  
2 tablespoons Adzuki Beans
1 tablespoon Pickled cabbage, bok choy, or ginger. (This is a must for my macro bowls. It helps keep my gut in check and adds a zing of flavor.)
¼ Avocado.
1 Sheet of Nori
Sprinkle Sesame Seeds.
1 tablespoon Flax seed oil - for those omegas! 
¼ Lemon

INSTRUCTIONS

  • Get a bowl, add the greens, veggies, rice, beans, and cucumber.

  • Slice the avocado and place on top.

  • Cut up the sheet of Nori and add to the bowl with the rest of the ingredients.

  • Enjoy!
