GLUTEN FREE APPLE & CINNAMON COFFEE CAKE

Recipe by John Scardina
Magazine: Issue #24

INGREDIENTS:

1/2 cup almond flour
1/4 cup arrowroot starch
2 tablespoons coconut flour
1/4 organic sugar or date sugar
1 tablespoon cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon butter, plus more for greasing the pan
2 eggs
1/2 cup coconut cream from a can of organic coconut milk (Thai Kitchen Organic) produces the most amount of cream
1 teaspoon vanilla
1 cup grated apple (about 1 large apple) Green or Granny Smith
Topping:
1 1/2 cups walnuts (or pecans, if you prefer)
1/2 cup almond flour
4 tablespoons melted butter
1 tablespoons organic sugar or date sugar
1 tablespoon cinnamon
pinch salt

DIRECTIONS:

Preheat your oven to 350° and grease a 8 x 8 baking dish.

Make the topping: pulse the walnuts in a food processor 10-12 times or until they are coarse crumbs. Add the remaining ingredients and pulse 2-3 more times until combined. Set aside.

Add your dry cake ingredients.to a cleaned processor (almond flour through salt) Pulse a couple of times to mix.

Cut the tablespoon of butter into smaller pieces and add it to the dry ingredients. Pulse until it’s cut in to the dry ingredients, similar to if you were making a pie crust.

In a small bowl, mix your wet cake ingredients (eggs through vanilla) and whisk until well combined. Stir in grated apple.

Add to the food processor and mix until combined. Scrape down the sides once or twice to make sure it’s well mixed.

Pour into the prepared baking dish and sprinkle the walnut topping over, as evenly as you can.

Bake for 30-35 minutes, or until a pick inserted into the center comes out clean.

Allow to cool, and enjoy!

Health Drink No-Nos for Women Entrepreneurs

HEALTH DRINK NO-NOS FOR WOMEN ENTREPRENEURS

Is your smoothie raising your body fat?

Holistic business women are so busy creating the coolest stuff on the planet, who has time to stop and eat?! I bet you’ve been drinking health drinks for years because they are da bomba, quick, and healthy at the same time. Why let hours of food preparation get in the way of your creativity? I have a little secret for you though – your health drink could be raising your body fat and slowing down your metabolism.

Many holistic women believe that juicing, green smoothies, and protein shakes are where it’s at in terms of gaining great energy and optimal health. I certainly have had a long love affair with juicing and green smoothies!

You might add crazy yummy organic fruit and milk substitutes like rice dream to your smoothies. With your juicing you could be making something scrumptious with apples, carrots, ginger, beets and lemons.

While all of those options are much better than reaching for the donuts, I still beg to differ. The reason is simple: too many carbohydrates = too much sugar (even if it’s natural) in your body = slowing down your metabolism = full fat cells = thunder thighs & muffin tops.

How do you get out of this predicament?

  • Purchase a complete amino acid profile protein powder that is either plant based or whey isolate
  • Add superfoods
  • Use low or no carb milk substitutes
  • Avoid the fruit and higher glycemic veggies

We all know that ‘real’ food does more than just provide our bodies nourishment. These 6 foods can enhance our memory, enhance our focus, protect us from mental exhaustion, improve our brain power and just plain help us to keep our creative spark ‘sparking’.

Lentils – these are great in soups but can be used in many other recipes.  Your brain loves the high folate and B vitamin content of lentils.

Nuts/Seeds - like walnuts, cashews, peanuts, almonds, flax seed, sunflower seed, tahini (key ingredient in hummus!). These make a great and quick snack to keep your creative mojo flowing late in the day. Bonus - nuts/seeds are easy to carry for a quick on the go snack.

Acorn squash - squash is easy to cook- just pop it in the oven, bake and eat!! Of course, there are a myriad of great recipes out there. Treat yourself to another yummy B12 powerhouse.

Mango - This is a most yummy and refreshing fruit (my personal fav) that is pack full of good for you nutrients….it is a great source of B6 and your brain loves this nutrient!

Honey - local and raw honey is amazing for you. It is loaded with B vitamins and will give your brain a boost!  It is great for use in your tea!

Fresh brewed tea (either loose leaf or tea bags - not the store bought processed kind) - with a teaspoon of honey, a fresh brewed tea has the unique ability to relax us and energize us at the same time

So, add some of these to your daily routine and spark your brain to new levels!!!

2 Foods That Will Kill Your Confidence (And What to do About It)

2 FOODS THAT WILL KILL YOUR CONFIDENCE
(AND WHAT TO DO ABOUT IT)

2 Foods That Will Kill Your Confidence

2 Foods That Will Kill Your Confidence

Article by Cymber Lily Quinn

Magazine: Issue #18

You've probably heard the saying, "You are what you eat." That could not be more true when it comes to the relationship between food and confidence. And you might be totally surprised to learn which foods are significant confidence killers.

1| Sugar

Hate to break it to you, but sugar kills confidence. Yes, you get a brief high from eating sugar, but you also get the crash later. And the crash is when you begin to question why you became an artist in the first place what were you thinking? Then you dive into a tailspin, wondering if you will ever feel creative again.

You can skip all that and stay productive and confidence by skipping sugar in all its forms white sugar, brown sugar, corn syrup, and even healthier forms including honey, maple syrup and agave.

INSTEAD: Eat a complete sugar in the form of fruit. Don't drink apple juice. Eat the apple. The rest of the apple is designed to help you digest the sugars better. And eat fruit in moderation.

To get the taste of sugar, try an herb called Stevia. Two drops of Stevia tincture in your water will taste like two teaspoons of sugar without the blood sugar roller coaster ride.

(And don't even think of sugar substitutes. SweetnLow, Equal, and Splenda all contain chemicals known to cause cancer. Cancer will put a serious dent in your confidence for a while. Skip that.)

All sugar causes inflammation in the body. That's why when you eat a big sugary dessert, you feel like you have a hangover in the morning. And speaking of hangovers...

2| Alcohol

I wish this weren't true, but it is. Alcohol is just another form of sugar, and a huge source of inflammation in the body. Inflammation is a fire that the body must put out in order to function well.

Sugar induced inflammation robs the body of nutrients and energy that could be used to increase your creativity and confidence. While it might feel like drinking a glass or two before performing or creating improves the flow of ideas, this is probably not true, and definitely temporary.

INSTEAD: Drink water, only. Yep, it seems extreme perhaps, but how long have you been drinking fire? Your body is 70% water, and that water needs to be changed out every so often. Drink 34 pints of water per day, and you'll find your confidence levels rising, as the sugars and alcohol leaving your body.

Your Confidence Depends on Your Food

When the body is working well, it will lend its energies to your confidence and creative activities. Eat simple, whole foods you know, foods that you can pronounce and recognize. Drink only water this simplifies shopping and ordering, too and will save you lots of money. As your body becomes healthier, you'll watch your confidence soar, too!
