GLUTEN FREE APPLE & CINNAMON COFFEE CAKE

INGREDIENTS:

1/2 cup almond flour
1/4 cup arrowroot starch
2 tablespoons coconut flour
1/4 organic sugar or date sugar
1 tablespoon cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon butter, plus more for greasing the pan
2 eggs
1/2 cup coconut cream from a can of organic coconut milk (Thai Kitchen Organic) produces the most amount of cream 
1 teaspoon vanilla
1 cup grated apple (about 1 large apple) Green or Granny Smith
Topping:
1 1/2 cups walnuts (or pecans, if you prefer)
1/2 cup almond flour
4 tablespoons melted butter
1 tablespoons organic sugar or date sugar
1 tablespoon cinnamon
pinch salt

 

DIRECTIONS:

Preheat your oven to 350° and grease a 8 x 8 baking dish.

Make the topping: pulse the walnuts in a food processor 10-12 times or until they are coarse crumbs. Add the remaining ingredients and pulse 2-3 more times until combined. Set aside.

Add your dry cake ingredients.to a cleaned processor (almond flour through salt) Pulse a couple of times to mix.

Cut the tablespoon of butter into smaller pieces and add it to the dry ingredients. Pulse until it’s cut in to the dry ingredients, similar to if you were making a pie crust.

In a small bowl, mix your wet cake ingredients (eggs through vanilla) and whisk until well combined. Stir in grated apple.

Add to the food processor and mix until combined. Scrape down the sides once or twice to make sure it’s well mixed.

Pour into the prepared baking dish and sprinkle the walnut topping over, as evenly as you can.

Bake for 30-35 minutes, or until a pick inserted into the center comes out clean.

Allow to cool, and enjoy!

Why is Photography important to you?

It is my life, I see the world in moments. Photography creates, captures and solidifies the essence of an individual, idea or moment.

Who or what influenced you to become a photographer?

I started in a highschool photo class, I loved it so much I worked all summer to save enough money to build my own darkroom, where I spent countless hours. I was the daughter of a construction family and photography was the furthest dream from rural PA. I wanted to shoot surfers and models. I studied at RIT in Rochester NY and have been influenced by the iconic greats like Annie Lebowvitz, Timothy Walker and Norman Jean Roy. My images are hyper real with a sense of sophisticated soul.

Do you believe in the expression “A picture is worth 1,000 words”?

To a degree, its mostly these days worth 1000 likes.

What is your favorite part of having your own creative business?

I am #manifestingthedream I'm creating my own experience on my terms. I get to create, collaborate and express share my gifts and help others.

What makes a good entrepreneur in your opinion?

The go-getter who seizes opportunities and who is smart and knows when to say no.

In your opinion, what makes photography an art?

Photography is the observation and interpretation of light, the art comes in the decisive moment and concept behind crafting the image.

What projects motivated you the most?

Projects where I can use my passion and skills in fashion, portraiture or to contribute to the greater good and re-balancing of the planet.

If you could give our readers 1 piece of advice about owning your own business, what would it be?

Perseverance, perseverance, perseverance and listen to your gut.

We often fail to recognize the potential for impact we have on others as we go about our day. When we can shed light on our unique areas of influence, it provides the awareness we need to keep developing those skills and shine them for others to see.

1| My family and friends: 

A. Text photos of outfits and jewelry and ask me, “What should I wear on this date or to a wedding?”

So how will you use your power as an influencer the next time you’re in line at the coffee shop, about to take on a big project, or asked to mentor a new person who’s arrived in your life?

What happens when your creativity is blocked? How does it affect you in your business, relationships and money?

  • When you stare at a blank page
  • When you aren’t inspired to make art 
  • When you lack innovative ideas for your biz…
  • Even when you just don’t know what you’re going to pull together for dinner

What happens then? More importantly, how do you get things moving again when you’re feeling stuck?
 
When I feel a little ‘off’ and I am blocked when I need to be making things happen, I have learned that it may be time for a change of scenery, for a mental break, maybe even a..... Private dance break!

Movement and dance are powerful ways to bust through those blocks. 

Dance will blow through a bad mood, help ignite creativity and make things happen! Many of my favorite forms of dance focus on the hip area. I especially like belly dance. Connecting the hips with the sacred shape of the spiral or the circle. This stimulates the sacral area, which is a very important part of your physical and energetic anatomy, and is crucial to be in touch with that part of you if you’re going to create anything in your life!

The power of the sacral chakra.

The sacral chakra is located just under your bellybutton, it is the seat of your creative power. Getting in touch with it when you are feeling stuck is a potent way to kick-start your creativity. Think about it, that area is connected with your sexual potency, your womb (where life is created and grows.)

I’m not talking about learning to dance perfectly, it’s not about performing or your technique… It is about moving the energy through your body, letting go and allowing yourself to be wild and free.

Shimmy those hips, shake and vibrate your chest, twirl your head and allow your hair to be tossed all around. Spin your entire body, have fun with it! There are abundant classes and videos, but for this purpose, all you need is a little privacy and the willingness to act silly because dance is a form of play.

Find your music. 

What kind of music makes it hard *not* to move? What lights you up and brings emotion? When you are moved to tears or laughter through music, when you shimmy in your seat just because “that song” came on, it’s a pretty big clue that it is moving energy, which frees the creative impulse.

If you want things to happen for you or your biz, make it happen by finding your music and shaking what the Mother gave you!

Allow your Inner Expression of Creativity to shine & spread like Wildfire. 

When we are super passionate about something, we want to tell the world. We want to place it on a blimp in the sky for everyone to see it. It is so easy to get discourage during your journey if you feel as though your message isn’t being heard or even understood.

I know your heart is yearning to act on your mission, spread your message, and inspire other people to take action. 

Here are a few ideas on spreading your message: 

1.  Team up with others who share your vision. Ask for help with endorsing your message through social media and other outlets that maybe helpful. It will make it so much easier to team up. You will be able to have more creative items added to your vision and message. I always say two heads are better than 1.

2.  Post quotes or create an inspiring blog. A message that will be able to help others is key. When you are able to motivate and inspire others in your own unique way, your message is bound to spread. Your blog or quotes can very well be intriguing to others just by having a powerful message. I strongly believe in creating your own style and flair. This will allow you to stand out from the rest to really prove to yourself and others that your heart only beats for the passion behind your message. 

3.  Be your unique self.  Don’t be afraid to be yourself with delivering your message to the world. It is super important to be authentic and genuine. Never step outside the genuine box with your delivery. I can’t stress how important this step is. Honesty is everything and this 7 letter word must be included with your delivery.

4.  Last but not least! Be Consistent.  If you are super serious and passionate about this one thing, stick to it and allow your message to flourish. If your message isn’t consistent, you will confuse others. Stick to what you are passionate about. You can't have consistency without improving your willpower. Consistency requires willpower to achieve anything.

Think about what your message is about and what you are trying to convey. There is nothing greater than having a powerful message that transforms lives and resonates with your soul. Allow it to bloom and spread like wildfire across the world. This will happen naturally as you continue to create a supportive team, post quotes, create an inspiring blog, be honest and true to who you are, and being consistent.

We all know that ‘real’ food does more than just provide our bodies nourishment. These 6 foods can enhance our memory, enhance our focus, protect us from mental exhaustion, improve our brain power and just plain help us to keep our creative spark ‘sparking’.

Lentils – these are great in soups but can be used in many other recipes.  Your brain loves the high folate and B vitamin content of lentils.

Nuts/Seeds - like walnuts, cashews, peanuts, almonds, flax seed, sunflower seed, tahini (key ingredient in hummus!). These make a great and quick snack to keep your creative mojo flowing late in the day. Bonus - nuts/seeds are easy to carry for a quick on the go snack.

Acorn squash - squash is easy to cook- just pop it in the oven, bake and eat!! Of course, there are a myriad of great recipes out there. Treat yourself to another yummy B12 powerhouse.

Mango - This is a most yummy and refreshing fruit (my personal fav) that is pack full of good for you nutrients….it is a great source of B6 and your brain loves this nutrient!

Honey - local and raw honey is amazing for you. It is loaded with B vitamins and will give your brain a boost!  It is great for use in your tea!

Fresh brewed tea (either loose leaf or tea bags - not the store bought processed kind) - with a teaspoon of honey, a fresh brewed tea has the unique ability to relax us and energize us at the same time

So, add some of these to your daily routine and spark your brain to new levels!!!
