How to Make Vegan Cheese

Thinking of going vegan but love your cheese? I get ya, I've been there. But you know its really easy to make your own really healthy nut or seed cheese, that's made from good quality protein and loaded with vitamins.

The first ingredient you need is Rejuvelac. This is the soak water from wheat seeds or grains. The liquid contains 8 different B vitamins plus vitamins E and K and it’s nutrients are easily absorbed. It is very cleansing and promotes the growth of friendly intestinal flora improving digestion. You can drink the soak water of wheat grains as a tonic after 12 – 15 hours.

To make Rejuvelac:

Soak 1 cup of wheat grains in 3 cups of water for 48 hrs. You can repeat the soaking with the same grains for up to 3 more times soaking for 24 hours each time. The grains can then be used for sprouting.

To make the cheese you will need:

2 cups of almonds
1 cup Rejuvelac
Pinch of vegetable bouillon
1 teaspoon of fresh parsley
Salt and pepper to your taste

Grind the almonds then add the remaining ingredients and mix well. Place in a bowl, cover with a tea-towel and leave to ferment at room temperature for 12 hours. Chill in the fridge for an hour and its ready to serve. You can experiment with the consistency by adding or reducing the amount of rejuvelac. Try using other nuts such as cashews, and also seeds such as sesame and pumpkin – or a combination is great. Substitute with different herbs too.
